One can eat delicious capuliata in virtually every part of Sicily. Capuliata is a type of pâté whose main ingredient is mixed dried tomatoes. There are many varieties of capuliata, some contain almonds or nuts, others are enriched with many types of aromas. We, however, have developed a very simple recipe which allows us to fully extract the taste of dried tomatoes. It has few additives, the preparation of our capuliata is very simple. We remove salt from the dried tomatoes with water and vinegar, then we pour olive oil on them with capers, oregano, rosemary, and a touch of hot chilli pepper. We mix it all together.
Store in a cool and dry place. Store in the fridge after opening, keep adding olive oil to ensure that the content of the jar is covered.
Capuliata is an ideal addition to pastas and appetisers such as “bruschetta”. It is also ideal as an addition to home-made sauces or dips.
