This sauce is a delicious addition mainly to simple pasta dishes. This sauce is prepared according to a traditional recipe which says that the tomatoes should be picked once they are fully ripe and sweet. Immediately after picking we cook them, squash them through sieves, add pepper cooked only for a few minutes – for it to keep its properties, we add our olive oil, our basil, and a pinch of salt which helps to extract the tomato sweetness. All of it according to the recipe of Pina Salemi, who still oversees the work in the kitchen and samples each sauce to ensure that they taste like home-made.
Keep in a cool and dry place. Refrigerate after opening.
This sauce does not require to be cooked once more. It can be used as an addition to pastas or to appetisers such as “bruschetta” in conjunction with other additions, e.g. oregano or onion which underline the exceptional taste of the sauce.
