This sauce is prepared according to a traditional recipe which says that the tomatoes should be picked once they are fully ripe and sweet. Immediately after picking we cook them at 92 degrees for about 50 minutes, we drain them, add our olive oil, our basil, and a pinch of salt which helps to extract the tomato sweetness. Thanks to the pasteurisation process which happens in the bottles, we manage to keep the quality of our products, so that it tastes as though it had just been prepared.
Keep in a cool and dry place. Refrigerate after opening.
This sauce does not require to be cooked again, it is ideal as a beverage, and also as an addition to pasta, pizza, or appetisers such as “bruschetta”. Alternatively, it can also be used as the basis for home made sauces and various ointments.
