Tarocco is one of the best known varieties of the Sicilian red orange. In the case of Tarocco, the sub-varieties are endless, to name just Gallo, Gabella, Ippolito, Lempso, Meli, Messina, Rosso etc). All these sub-varieties are on offer simply as Tarocco, except for one – Tarocco San’t Alfio, which ripens much later, that is at the turn of April and May. The trees of this variety give medium and large fruits. Their pulp has red-orange colour whose intensity depends on the sub-variety and the time of picking. The aroma and taste of this orange are very delicate. The fruits have very thin and smooth peel, they contain very few seeds. The colour of the red varieties of oranges is influenced by the vicinity of the volcano, the abundance of land rich in volcanic soil, and specific climate, characterised by big differences in temperatures between day and night. The pigmentation process is strictly connected with low temperatures of air, therefore in the case of high temperatures the pulp remains orange, or turns red only insignificantly.
