Honey produced in the region of Palermo, Caltanissetta and Agrigenro in May and June. This honey has a bright colour, after crystallization approaching white, and delicate scent. Its consistency is integral, but not compact, with easily dissolving crystals. It has a delicate taste with a herbal hint that allows this honey to be used in a range of applications.
