Romanesco cauliflower, as the name suggest, is a variety which comes from Lazio. It is a close relation with green cauliflower, from which it is differentiated by atypical, beautiful shape. Romanesco cauliflower has no great size, for example the one cultivated in Sicily weighs from 350 to 700g. It tastes well raw, it forms a great ingredient of elegant and tasty appetizers. In Sicily this vegetable is harvested in winter from November until February, and not later, because this cauliflower does not tolerate high temperatures well. It is planted in the regions of Caltagirone and Comiso.
