This chocolate is prepared according to the traditional methods of production of chocolate in Modica, at low temperature, thanks to which the tiny bits of sugar are distinguishable. Chocolate contains minimum 90% of cocoa. It has intensive taste and is recommended for the real chocolate lovers.
Due to the low temperature of the production process the chocolate from Modica has a tendency to lose its lustre, and there might appear local matt spots - this trait affects only its aesthetic qualities and has no influence upon the taste of the product.
It is also used in the kitchen as an ingredient of other dishes, where it is important to bring out the aroma of cocoa. For instance one of the varieties of caponata served hot.
